TASTE the Rainbow: Taiwanese Ratatouille

I LOVE colourful food.

Taiwanese Ratatouille
Serves 20

5 Asian eggplants
2 green bell peppers
3 yellow bell pepper
~10 half-fist size tomatoes
8 fresh shiitake or other mushrooms
2 loofah plants 絲瓜

sweet basil (about 10NT worth, or 3 fat handfuls)
herbs de provence
3 bay leaves
salt and pepper to taste

Also, dried tofu skins, or normal tofu skins/豆包 (see photo at end of post)

1. CHOP EVERYTHING except the flavorings into 1 cm chunkies.
2. Sautee everything in batches.  This makes everything more flavourful.

3. Then put it in a rice cooker pot.  Add the flavourings.  And tofu.
4. Put it in a rice cooker and hit cook.

5. Leave it alone for several hours.
Serve with soup and fried rice!
