EASY Chocolate Lava Cake!

I have gone through so many recipes for chocolate lava cake. This one is definitely the easiest, and requires the least measuring. Just make sure your eggs are room temp -- there is no screwing up.


Topped with vanilla ice cream!




Serves 6

Melt (in microwave or double-boiler):
4 T. butter (1/2 stick)
~3/4 C. chocolate chips OR a large chocolate bar (3.5 oz/100g)

Set aside to cool

In a small bowl, beat together:
3 eggs, ROOM TEMP
Splash vanilla
tiniest sprinkle cinnamon, optional (it enhances the chocolate flavour, but don't add too much or you will be able to taste cinnamon, which I don't like)

Very carefully add the warm chocolate mixture to the egg mixture a little at a time, or in drizzles, beating very well to incorporate.

Add 1 T. flour.

Spoon into oven-proof (greased and sugared, if turning out) ramekins or mugs til' 1/2 full

Bake 375F/170C 5-10 min until the top just cracks a little bit.

Serve IMMEDIATELY, with good ice cream, or whipped cream and fruits :) Or plain. Whatever.
