Colourful Spaghetti Sauce

A thick, flavourful, and NUTRITIOUS spaghetti sauce that is excellent on its own or part of a bake. Frozen veggie add colour and nourishment while keeping it easy :) Try making lasagna with it for extra veggie goodness!

Colourful Spaghetti Sauce!
Serves 8-10

1 T. oil
1 handful chopped mushrooms
1 piece hundred-day QQ tofu, or firm tofu
some frozen veggies
1 jar pre-made spaghetti sauce OR tomato sauce
1 small handful basil (fresh or frozen), chopped, optional
Sugar to taste

1. Stir-fry mushrooms and tofu in a pot 'til fragrant
2. Add the sauce and frozen veggies and bring to a simmer.
3. Taste the sauce and season with sugar (to cut the acidity) and pepper to taste.
4. Add the basil, if using.
5. EAT! Yaaaaaaaay!
