Mung Bean Curry

An easy, cheap, protein-packed meal-in-a-bowl.

Sometimes I think that maybe I shouldn't post pictures because it might put some people off. I mean, seriously. This looks disgusting, but it tastes GREAT.

a bit of oil
2 or so cloves garlic
1/2 an onion, chopped
1 knob ginger, chopped

Mushrooms & sturdy veggies of choice, chopped -- I used enoki and brown mushrooms; you could add carrots and potatoes or broccoli and stuff if you want.

1 cup mung beans, washed and steamed/cooked
2 or 3 tomatoes, chopped or out of a tin

1 t. cumin
1/2 t. coriander if you've got it, we didn't
1/2 t. turmeric if you've got it, we didn't
salt and pepper to taste

1. Sautee the garlic and onions 'til fragrant, add the ginger and sautee some more.
2. Add your mushrooms and veggies and sautee 'til almost just cooked thorough.
3. Add the mung beans and tomatoes, and spices. Simmer 5 minutes.
4. Add salt and pepper to taste.
5. Serve over rice or with bread.
