Grilled Peaches and Marshmallow Dessert Toast

It's like a healthier version of S'mores! A heads up to the veggie-heads, marshmallows usually contain gelatin. By usually I mean all the time, unless you are fancy enough to get your hands on some vegan marshmallows (try Sweet & Sara, or Dandies) or hardcore enough to make your own (more marshmallow-making goodness here).


Sweet juicy peaches, soft melty marshmallow and toasty bread, sprinkled with a bit of pomelo for Moon Day -- the perfect ending to a barbecue!
Ingredients:
Peaches
Sugar
Foil

Marshmallows

Bread

Directions:
1. Roast your peaches: Cut up the peaches into chunks, place them in foil, sprinkle with sugar, seal, place in grill. Leave it for 20-30 minutes for 3 peaches.

2. When the peaches are done (read: tender and DELICIOUS), roast your marshmallow. Roasting over coals works better than over fire. Meanwhile, toast your bread on the grill.

3. Assemble: place your perfectly roasted marshmallows on the toast, top with peaches, OM NOM NOM.
