Cool Yam Leaves with Garlicky Soy Paste

Super-easy side dish great for summertime :) Yam leaves are also AWESOME for you! They're packed with nutrients such as Vitamins A & E, niacin and phosphorus, as well as dietary fiber. (Source)



Ingredients:
Yam leaves, washed and ends trimmed
Garlic, to taste
Soy paste & sauce, to taste
Boiling water
Ice water

Directions:
1. Parboil the yam leaves.
2. Once they are bright green (~1 min.) remove and immediately plunge in ice water to stop them cooking. Drain, squeeze dry, arrange on a plate and set aside.
3. Smash the garlic cloves or chop them finely. Place them on top of the leaves.
4. Drizzle with soy paste and sauce to taste. I use 'pot bottom soy sauce' and 'original soy paste' from Kimlan. They are both a little bit sweet, which is important in this dish.
5. Chill in the fridge 'til ready to serve.
