Zucchini & Tomato Dish

This versatile simmered dish is equally good as a side or on pasta as a main entree! Fresh basil is the key flavouring ingredient, but if you haven't got a basil plant on hand, dry will do the trick, just add it straightaway.

Zucchini & Tomato Dish
Serves 1-2

1 t. butter
1 medium zucchini, chopped into chunks
1 medium tomato, or equivalent plum/cherry/grape tomatoes, diced
4 leaves fresh basil, cut into strips
pinch salt
pepepr to taste, optional

1. Heat skillet to medium-high and add the butter. Coat the pan and add zucchini pieces, cut sides down. Cover 1-2 minutes, 'til zucchini is lightly browned.
2. Add tomato and basil. Cover, reduce heat to medium-low, and simmer.
3. When the tomato has become mushy, add the salt & pepper to taste.
4. Serve hot on to side or over pasta.
