Vegetarian Beef Noodle Soup

Beef Noodle Soup is a traditional Taiwanese dish. The tricky part of this recipe is getting the right beef substitute. I use the stuff from vegefarm, which is REALLY DELICIOUS.

Taiwanese Beef Noodle Soup -- Vegetarian Version!


2 fat slices Ginger, diced
5 sections white parts of Scallion, smashed
2 C. Water
1/8-1/4 C. Soy sauce, to taste
1 spoonful Brown sugar, to taste
Star anise, 1 clove whole or equivalent powdered
Chile pepper or other spicy thing, if desired

High quality vegetarian beef substitute
1 ea. Carrots & Daikon, chopped
1 Tomato, diced (I didn't have one, you can also use tomato sauce)

Chinese white noodles

Green parts of scallion for serving

1. Combine ingredients for ~A~ in a pot and bring to boil. Makes sure it tastes good.
2. Add the beef and vegetables.
3. Simmer ~1 hr. or until veggies are soft and infused with FLAVOUR!
4. Cook the noodles according to the package.
5. Combine noodles and soup in serving bowl.
6. Garnish with fresh green parts of scallion and serve.
