Giant Kimchi Flatcake

A delicious and filling meal. Aside from kimchi, you can also add leftover vegetables and other bits and pieces.

In a bowl, mix 'til smooth-ish:
1 C. flour
2 C. water
1 egg
1 T. oil (optional)
pepper salt to taste

Kimchi, chopped up finely
Leftovers, diced

Heat a non-stick pan over medium heat. Grease the pan so the pancake doesn't stick.
Spoon some batter into the pan, so it completely covers the bottom.
When the flatcake has swelledm the edges are firm, and there is a matte sheen to the surface, which no longer jiggles, you can flip it.
If it is very large, slide it onto a plate, place the pan over the plate, and invert to flip.
Cook until lightly browned and thoroughly done. There should be no gooey bits.

Serve with ketchup or sweet and sour sauce.
