Macaron


90 g. egg whites
2 T. granulated sugar

Beat 'til stiff peaks.

Fold in:
110 g. ground almonds (or grind whole almonds in a food processor)
200 g. powdered sugar

Pipe onto parchment paper (on top of a cookie sheet)
Let sit one hour.
Bake 18-20 min. @ 300 F
Cool.
Fill.
Eat.

Notes: For chocolate substitute some powdered sugar with cocoa (good filled with Nutella). Quite rich. Quarter-size rounds are about right. Make them dime-sized for sweeter fillings.
